I've got to have two size iron frying pan's just for mom's buttermilk cornbread.(when I'm hungry and when I'm REALLY hungry) I know it's sacreligious to admit. But I use cheap walmart ceramic coated non-stik pans cause after cooking while pan is hot I can wipe all excess grease and food with one-half paper towel, spray the pan down with white distilled vinegar and use the other half of paper towel to dry it, sit down and still have a hot meal and the pan is ready to go for the next time. YMMV
