Just Like Mom Used To Make

Everyone has something that one taste brings back childhood. I have so many different things that have been passed down to my children. One of my favorites is gibblet gravey. My youngest daughter learned how to make it when she was 10. 

In a 4 quart pot put 2 quarts of water, onion, bay leaf, beef and chicken bullion, the neck, and a stick of butter. Fine chop the liver and add to pot. Simmer while the turkey is roasting. Baste the bird from the pot, and replace the juice from the drippings. Add water to the pot as needed. When the turkey is done, pull the neck and debone it. Add the drippings to the pot and skim off the fat. Thicken with corn starch as needed. 

After dinner we would boil the carcass and have stock for many more meals.

Pickled eggs

Hard boil about a dozen eggs. I find that they peel easier when you start with them room temperature. put some vinegar in the water and put them in ice water to cool. 

The 9 best peeled eggs go into a quart jar. 

I like to use the juice from Aunt Nelly’s baby beets from Walmart. I add pickling spice and some balsamic vinegar. There are hundreds of different recipes online. Search for what sounds good to you. 

This is a low calorie snack (about 80 each) that brings things to a different level.

Good ol' american goulash and a simple one pan meal:

YIELDS:

PREP TIME: 0 HOURS 15 MINS
TOTAL TIME: 0 HOURS 45 MINS

INGREDIENTS
2 tbsp. extra-virgin olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 lb. ground beef
Kosher salt
Freshly ground black pepper
1 tbsp. tomato paste
1 1/4 c. low-sodium beef broth
1 (15-oz.) can tomato sauce
1 (15-oz.) can diced tomatoes
1 tsp. Italian seasoning
1 tsp. paprika
1 1/2 c. elbow macaroni, uncooked
1 c. shredded cheddar
Freshly chopped parsley, for garnish (optional)


DIRECTIONS
In a large skillet over medium heat, heat oil. Add onion and cook until soft, about 5 minutes. Add garlic and cook until fragrant, about 1 minute more.
Add ground beef and cook until no longer pink, about6 minutes. Drain fat and return to pan. Season with salt and pepper.
Add tomato paste and stir to coat, then pour in broth, tomato sauce, and diced tomatoes. Season with Italian seasoning and paprika, and stir in macaroni. Bring to a simmer and cook, stirring occasionally, until pasta is tender, about 15 minutes.
Stir in cheese and remove from heat. Garnish with parsley before serving.

Uhh, Swansons tv dinners or meatloaf. Mom never liked to cook and showed it. She was a “feminist from the 50’s” and well, lets just say that few people came for dinner and fewer ever came back...

My mom cooked all kinds of things. My favorite as a kid was home made macaroni and cheese with soda crackers on the top baked to perfection.

My mom wasn’t a great cook, but I truly loved her cube steak, mashed potatoes, and green beans. But then again I also enjoyed chow hall food when I was a kid.   Tongue

S.O.S. was another one. I am hungry for it now. Mom wasn't much of a cook but she tried. There were a few things she made well. Liver and onions wasn't one of them and I still won't even try it to this day.

Daughter-in-law doesn't like to cook (or clean) either so the meals here are not very healthy. Taco's tonight and had enchiladas last night, no sides. Glad we take vitamins.

My mom could make liver and onions taste good. But the dog sure ate good...

Huh

My mother’s family was big, and everyone knew how to cook.  

My pasta sauce recipe came from Sicily and takes all day to make.   Cool
