Last night I took the easy way out. Walmart's premade chicken salad with some added ingredients... a little extra mayo, touch of liquid stevia, boiled eggs, and apple. Ate some of it on romaine lettuce. It was awesome. The chicken salad (marketside I believe) is already pretty good. I usually use rotisserie chicken for chicken salad, but this was even easier.
