Thank you Tx2Sturgis!  We had hard enough time finding a van but couldn't find the right one with a high top.  We ended up heading to Fiberine to get a top added. Will definitely check out the chat on Tuesday nights!

Sorry for the late reply.  Here are a couple pics of our build.  Yes, that is a Home Depot workbench for our kitchen counter.  We love the large drawer and hardwood counter top.  Fridge resides underneath on drawer slides.  After having gone the full electrical build (full for us anyways.....batteries in parallel, MPPT, bus bars, fuse blocks, charger...) we decided to use a portable power station to connect up to an enclosure that contained a single fuse block.  The fuse block connects our USB charger ports, MaxxAir Fan, Fridge, multiple LED lights , and water pump.  We then have an exterior SAE port for solar that connects into the portable power station.  Our reasoning......I wanted to replace our aging AGM batteries with Lithium, but our van often sits in 110 degree weather and with temps significantly higher in the van, I didn't want to leave our string of LIFePO4 batteries sitting there.  As an example, I contacted Battle Born and they thought it would be in our best interest to not leave the batteries sitting there in that high of heat.  With the portable power stations, I just remove from the van when not in use.  (we are not full time yet)

The top photo was taken at Lake Cachuma near Santa Ynez and the bottom photo at the infamous Song Dog Ranch in New Cuyama Ca..
