Cannabutter Recipe


Ingredients:
1 pound butter
1 ounce coarsely ground cannabis
4 cups water

Directions:
To make your cannabutter, cooking the marijuana and butter in a crockpot works well, but you may also use a stainless steel pot with water, as well double-broiler option.  For this example, a regular stainless-steel cooking pot - which should be found in any household kitchen will be used.

Combine the butter, ground-cannabis and water into the pot and place on stove under low heat.  You will want the cannabis to simmer in the melter butter for a feew hours, 3-4 hours suggested, but you can cook the cannabutter on low heat up to 24 hours.  Doing so can produce a much more potent cannabutter, but the author prefers to use more cannabis instead of the longer cooking time.  Be sure to add more water as neede to the cannabutter while it is simmering, in order to prevent the cannabis or butter from burning.  Please be aware that this will make your cooking location smell like the cannabutter, which is basically a scent of cannabis and butter.  It can draw unwanted attention, so ventilate cautiosly and accordingly.  

After the cooking period, you will need to separate the cannabis plant material (which no longer contains any THC content) and the water from your newly made cannabutter.  The plant material can be disposed of.
In order to separate the cannabutter it is best to use a strainer and if  possible, with a cheesecloth to remove the liquid cannabutter from the plant matter.  Begin by straining the cooling cannbutter mix into the strainer with cheesecloth and a container.  The container will capture your filtered cannabutter and water - leaving theh plant matter within the cheesecloth and strainer.  You can extract more liquid cannabutter mix into your container by thoroughly squeezing the cheesecloth pulp, until it seems no more can be extracted.
You can now plaace your container of liquid cannabutter and water into the refrigerator to help with cooling and separating the water from cannabutter.  Once fully cooled you will have a layer of solidified cannabutter that should have a 'green' color to it, depending on length of time cooked, and if there is any plant matter within the butter itself - this is okay, as it adds a little texture to the butter.  You can now remove and place the cannabutter layer into a storage container to keep within the friede or freezer, if you choose freezer, it does allow the product to last for month when properly stored.

Now with the cannabutter "base" you can substitute it in a variety of meals, both savory and sweet.  Either applied to toast, used in recipes that normally call for butter, it can be applied to an assortment of food.  All you should need is a tbsp of cannabutter to feel the medicinal effects for 3-4 hours.  For beginners or first-timers, start with a tsp amount and see how the effects are after one-hour, before consuming more - at least the first couple of tries.  Remember you want to learn and understand what ratio and combinations work best for you.

When cooking with cannabis, it is best to cook or bake items that will stay under 210 degrees Celsius or 401 degrees Fahrenheit - if the medibles cooked with your cannabutter mix exceed these temperatures, you may risk destroying the THC and cannabinoids within the cannabutter and making your dish non-medicated.  Be careful and pay attention to the cooking temperatures.

Infusion-Based
Marijuana Buffalo Chicken
Serves: 2
Prep Time: 5 minutes
Cooking Time: 8-10 minutes

Ingredients:
1/4 cup hot sauce of your preference
1 tbsp cornstarch
2 tbsp vegetable oil
2-3 medium boneless, skinless chicken breasts
1/4 cup cannabutter

Directions:
1. Pour the hot sauce into a medium saucepan
2. Whisk gently and heat the sauce for 2-3 minutes
3. Add the cornstarch and stire the mixture
4. Add the cannabutter, and stir until it melts
5. Heat until the desired thickness is reached.  Set saucepan aside
6. Heat the oil in a skillet over medium-high heat, and cut chicken into 2-inch chunks.
7. Brown the chicken on all sides
8. Add the hot sauce and stir to coat

Cinnamon Canna Cupcakes
Makes: 24 cupcakes
Prep time: 20 minutes
Cooking time: 15 minutes

Ingredients:
11/4 tsp baking powder
1/3 cup white sugar
1 cup all-purpose flour
1/4 cup cannabutter
1/4 cup white sugar
1/2 cup milk
1 egg, beaten

Topping
1/4 cup white sugar
1 tbsp cinnamon
Your choice of filling (strawberry, raspberry, blueberry, etc.)

Directions:
1. Preheat oven to 375F
2. In a large bowl, thoroughly mix the baking powder, sugar, and flour together
3. In a separate bowl, whisk the cannabutter, egg, and milk together
4. Add the flour mixture to the wet ingredients and mix just until combined
5. Pour into cupcake pans (small cup size) and bake for 10-12 minutes
6. Mix 1/4 cup of white sugar and cinnamon in small bowl
7. Take out the prepared cupcakes and coat with the cinnamon mix
8. Top with desired filling


Cannabutter Cookie
Makes: 14-16 cookies
Prep time: 10-15 minutes
Cooking time: 10 minutes

Ingredients:
3/4 cup cannabutter
1 cup brown sugar
1 egg
1 tsp vanilla
2 1/2 cups flour
1/2 tsp baking powder
1 tsp salt

Directions:
1. In a large bowl, beat the butter until it is fluffy
2. Add the sugar, egg, and vanilla.  Mix well
3. In a different bowl, mix the flour, baking powder, and salt
4. Add it to the butter mixture, and mix the ingredients to form a soft dough
5. Divide the dough in half, flatten it, and wrap the discs in plastic wrap.  Refrigerate for 60-90 minutes
6. Line a cookie sheet with parchment paper, and preheat oven to 375F
7. Take it out and roll each half of the dough to a 1/4-inch thickness
8. Cut out round cookie shapes, using a cookie cutter.  Rework the remaining dough until it is all used
9. Place the cookies 1 inch apart on the prepared cookie sheet
10. Bake for 10 minutes
11. Serve warm!!!


Blueberry Oats Muffins
Makes: 10-12 muffins
Prep time: 10 minutes
Cooking time: 25 minutes

Ingredients:
1 cup flour
1/2 cup quick oats
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 egg
3/4 cup milk
1/4 cup cannabutter
3/4 cup blueberries

Directions:
1. Preheat oven to 400F
2. Line 12 muffin tins with paper liners
3. In a large mixing bowl combine the flour, oats, sugar, baking powder, and salt
4. Create a hole in the center of the dry ingredients; and set bowl aside
5. In a small bowl, mix the egg, milk, and cannabutter
6. Pour the wet ingredients into the indent in the dry ingredients, and stir until they are just combined.
7. Add the blueberries and fold them into the batter
8. Bake for  20-25 minutes


Canna Choco Dipped Strawberries
Serves: 5-6
Prep time: 5 minutes
Cookiing time: 2-4 minutes

Ingredients:
1 1/2 cups chocolate chips
2 tbsp cannabis-coconut oil
12 strawberries

Directions:
1. In a medium-sized bowl, thoroughly mix the coconut oil and chocolate chips
2. Set the microwave on high, and heat the mixture for 30-40 seconds.  Take out and stir well
3. Place it back and heat for 15-20 seconds more, and stir again, repeating until the mixture is perfectly smooth
4. Let it cool down for 10 minutes
5. Dip the fresh strawberries into the chocolate mixture
6. Place them on a piece of parchment paper 


Cannabis Darjeeling Tea
Serves: 1
Prep time: 2 minutes
Cooking/infusion time: 3-4 minutes

Ingredients:
1 tsp cannabutter
1 Darjeeling teabag or your choice
Milk and sugar if desired
Boiling water for a cup or mug

Directions: 
1. Boil the water in a kettle, and place the teabag in a teapot
2. pour the boiled water over the teabag, and stir in the cannabutter
3. Allow the tead to infuse for 3-4 minutes.  Stir a little
4. Pour the tea into a teacup, and discard the bag
5. Add milk and sugar if desired.


Orange Canna Cookie
Makes: 36 cookies
Prep time: 15 minutes
Cooking time: 8-10 minutes

Ingredients"
1/2 cup cannabutter
2/3 cup sugar
1 tbsp orange zest
1 tsp orange juice
1 egg
1/2 tsp baking soda
1 1/4 cups flour
Dash of salt
1 tbsp poppy seeds

Directions:
1. Preheat oven to 350F
2. In medium-sized bowl, beat the cannabutter and sugar until fluffy
3. Add the orange zest, juice, and egg; mix well
4. In a separate bowl, combine the baking soda, four, and salt together
5. Add the dry ingredients to the egg mixture, and mix to combine well
6. Add the poppy seeds
7. Dro spoonfuls of the dough on the cookie sheets, leaving 2 inches between
8. Bake for about 10-12 minutes
9. Remove from heat and let cool for a few minutes


Canna Vanilla Popcorn
Serves: 10
Prep time 25 minutes
Cooking time: 1 hour 10 minutes

Ingredients:
1/2 cup + 2 tbsp cannabutter
1 cup + 3 tbsp brown sugar
1/4 cup + 2 tsp corn syrup
1/2 tsp salt
1/4 tsp baking soda
1/tsp vanilla extract
12 cups prepared popcorn

Directions:
1. Preheat oven to 250F.  Spray two large baking sheets with cooking spray, and set them aside.
2. In a medium saucepan, melt the butter over medium heat
3. Add the brown sugar, corn syrup, and salt
4. Boil the mixture for 5-6 minutes, stirring often
5. Add the baking soda and the vanilla
6. In a large mixing bowl, pour the mixture over the popcorn and coat well
7. Arrange the popcorn on the baking sheets
8. Bake for 55-60 minutes, stirring three times throughout


Canna Pasta Sauce
Serves: 3
Prep time: 5 minutes
Cooking time: 5 minutes

Ingredients:
2 tbsp cannabutter
1 onion, chopped
3 cloves garlic, thinly sliced
3 (12 ounce) cans tomato sauce
Oregano, basil, thyme to taste
1 bay leaf
1 pinch salt and pepper each

Directions:
1. In a medium saucepan, melt the butter and add the onion
2. Heat over medium for 2-3 minutes, stirring frequently
3. Add the garlic and cook for 2 more minutes
4. Add the tomato sauce, oregano, basil, thyme, bay leaf, salt, and pepper.  Bring the mixture to a simmer and let it bubble for 20-30 minutes
5. Enjoy with your favorite pasta


Orange Raisin Cupcakes
Makes: 12 cupcakes
Prep time: 15 minutes
Cooking time: 20 minutes

Ingredients:
1 1/2 cups all-purpose flour
1/2 tsp cinnamon, ground
1/2 tsp allspice, ground
1/4 tsp nutmeg
1 tsp baking soda
1/4 tsp salt
1 1/4 cups brown sugar
1/2 tsp vanilla extract
1/4 cup orange juice
1/4 cup cannabutter
2 large eggs
1/4 cup chopped walnuts
1/2 cup raisins
1 1/2 cups carrot, shredded

For the frosting
3/4 cup confectioners' sugar
1/2 tsp vanilla extract
8 ounces cream cheese
Shredded coconut for garnish (optional)

Directions:
1. Preheat oven to 350F
2. Prepare cupcake pans by placing paper baking cups in them
3. In a medium-sized mixing bowl, thoroughly combine the flour, spices, baking soda, and salt
4. In a separate, large bowl, thoroughly mix the sugar, vanilla extract, juice, and cannabutter.  Add the eggs one by one, combining well after each
5. Fold in the walnuts, raisins, and carrot
6. Pour the batter into the paper baking cups
7. Bake for 15-18 minutes. The cupcakes are done when a toothpick inserted in the center comes out clean
8. Allow the cupcakes to cool completely
9. In a medium-sized bowl, thoroughly whisk the frosting ingredients together
10. Top the cupcakes with the frosting mixture.  Sprinkle some coconut on top if desired


Italian Expresso Brownies
Serves: 16
Prep time: 15-20 minutes
Cooking time: 40 minutes

Ingredients:
4 ounces bittersweet chocolate
3 tbsp unsalted butter
1 1/2 cups white sugar
1/2 cup cane sugar
2 tbsp cannabutter
1 tsp vanilla
Pinch of salt
3 eggs
1 cup all-purpose flour
1 tsp ground Italian espresso beans

Directions:
1. Preheat oven to 350F
2. Lightly grease a 9x13 brownie pan, and then line it with aluminum foil
3. Melt the chocolate in a medium saucepan over medium-low heat
4. Add the regular butter, white sugar, and cane sugar
5. Thoroughly whisk the mixture to completely melt all the sugar
6. Add the cannabutter, vanilla, salt, and eggs.  Whisk for two minutes
7. Add the flour and expresso, and combine well with the chocolate mixture
8. Spread the batter into the pan
9. Bake for about 40 minutes
10. Enjoy the brownies solo, or with your favorite hot coffee


Canna Chocolate Brownie
Serves: 12-14
Prep time: 10 minutes
Cooking time: 30 minutes

Ingredients:
1/4 cup butter
1/4 cup cannabutter
1 cup chocolate chips
3/4 cup self-rising flour
1 1/2 tsp vanilla
1 cup sugar
2 eggs

Directions:
1. Preheat oven to 350F and lightly grease a 9-inch square baking pan
2. Melt the butter, cannabutter, and chocolate chips in a saucepan
3. Remove the pan from the heat and add the remaining ingredients; combine well
4. Spread the batter in the baking pan
5. Bake for half an hour
6. Take them out and let them cool down for a few minutes
7. Cut, and serve warm!


Pineapple Nut Balls
Makes: 36 cookies
Prep time: 18-20 minutes
Cooking time: 15 minutes

Ingredients:
3/4 cup sugar
1/2 cup softened cannabutter
1 cup crushed pineapple in juice, drained
1 tsp vanilla
1 3/4 cups all-purpose flour
1 tsp baking powder
2/3 cup macadamia nuts, chopped
3/4 cup sweetened flaked coconut, divided
1/4 cup chopped crystallized ginger (optional)

Directions:
1. Preheat oven to 350F
2. Thoroughly whisk the sugar and cannabutter in a large bowl
3. Add the pineapple and vanilla and continue mixing
4. Mix in the flour and baking powder
5. Add the nutes, 1/4 cup of the coconut, and ginger
6. Combine well and form 1 1/2 -inch balls
7. Pour the remaining coconut in a separate bowl
8. Dip one side of each ball in the coconut
9. Place them onto ungreased baking sheets, with 2 inches of space in between
10. Bake for 12 to 15 minutes


Canna Cream Potatoes
Serves: 4
Prep time: 5 minutes
Cooking time: 10-15 minutes

Ingredients:
4 large potatoes, peeled and cubed
1 tbsp salt
1 tbsp black pepper
4 tbsp cannabutter
4 tbsp butter
1/2 cup heavy cream
3 tbsp olive oil
1 tbsp fresh chives, chopped fine

Directions:
1. Place the potatoes in a medium saucepan, and sprinkle in the salt
2. Boil until soft and perfectly tender
3. Drain and mash the potatoes
4. Heat the cream until warm without boiling it
5. Add the pepper, both the butters, and cream.  Mash again
6. Mix in the chives
7. Serve immediately.

Classic Marijuana Coffee
Serves: 2-3
Prep time: 2 minutes
Cooking/boiling time: 5 minutes

Ingredients:
2 cups coffee
1 tsp butter
1 tbsp canna-coconut oil
Honey or maple syrup to sweeten, if desired

Directions:
1. Brew a pot (about 2 cups) of coffee
2. Remove the pot from the heat and add the butter and coconut oil
3. Add honey or maple syrup if desired

Nutricious Oatmeal Bar
Serves: 8-10
Prep time: 10 minutes
Cooking time: 30 minutes

Ingredients:
1 tsp baking soda
2/3 cup cannabutter, melted
2/3 cup honey
1 cup all-purpose flour
2 tsp vanilla extract
1/3 cup brown sugar
5 cups oatmeal
2 cups mixture of raisins, coconut flakes, pecans, walnuts, and chocolate chips

Directions:
1. Preheat oven to 325F
2. Grease a 9x13 baking pan with cooking spray
3. Thoroughly mix all the ingredients in a large bowl
4. Pour the mixture into the prepared baking pan, and press it gently to an even thickness
5. Bake for 25-30 minutes, until it is a light golden color
6. Cool for 30 minutes
7. Cut into pieces and serve


Peanut Butter Canna Cookies
Makes: 24 cookies
Prep time: 15-20 minutes
Cooking time: 8-10 minutes

Ingredients:
1/2 cup cannabutter
1/2 cup peanut butter
1 1/4 cups flour, divided
1 egg
1 1/2 cups white sugar, divided
1/2 cup brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract

Directions:
1. Preheat oven to 350F
2. Heat the cannabutter for 30-40 seconds in a microwave, until it melts.
3. Mix the melted cannabutter and peanut butter together
4. Add 3/4 cup of the flour, the egg, 1 cup of the white sugar, the brown sugar, baking powder, baking soda, and vanilla extract.
5. Mix thoroughly, and then mix in the remaining flour
6. Pour the remaining 1/2 cup of white sugar into a small bowl
7. Form the dough into 1-inch balls, and roll the balls in the sugar to coat
8. Place the coated balls on a baking sheet
9. Bake for 10 minutes
10. Serve warm with a glass of milk


Cranberry Canna Bars
Serves: 36 bars
Prep time: 25 minutes
Cooking time: 40 minutes

Ingredients:
For the crust:
3/4 cups white sugar
1 1/2 cups all-purpose flour
1/4 tsp salt
3/4 cup cannabutter

For the topping:
1 cup sweetened dried cranberries
2 cups sweetened flaked coconut
3/4 cups brown sugar, packed
1 1/2 tsp vanilla
3 eggs, beaten

Directions:
1. Preheat oven to 350F
2. In a medium-sized bow, combine the white sugar, brown sugar, flour, and salt together
3. Add the cannabutter and using clean hands, rub it into the flour and sugar to make a crumbly mixture
4. Press the mixture into the bottom of a 9x13 baking pan
5. Bake for a few minutes, until the edges are lightly golden
6. Mix all the topping ingredients in a large bowl, and pour it over the crust.  Spread it out evenly.
7. Bake for 22-25 minutes until the custard is set and edges are golden


Canna Steak Salad
Serves: 5-6
Prep time: 8-10 minutes
Cooking time: 10-15 minutes

Ingredients:
20 ounces skirt steak
Juice of half a lime
1 tbsp chili powder
2 bunches cilantro
1 bunch parsley
1 bunch scallions, chopped
1/2 cup carrot, shredded
1 bunch arugula
16 medium cherry tomatoes
2 tbsp canna olive oil
2 tsp Dijon mustard
3 tbsp balsamic vinegar
1 tbsp olive oil
Salt and pepper to taste

Directions:
1. Preheat your grill over medium-high heat
2. Set out the steak and drizzle the lime juice over it
3. Add some chili powder, and rub it into the surface of the meat
4. Grill the steak for 10-15 minutes, until tender
5. Shred it using a fork
6. In a large salad bow, combine the cilantro, parsley, scallions, carrot, arugula, and tomatoes
7. In a separate bow, mix the canna olive oil, mustard, balsamic vinegar, olive oil, salt, and pepper.
8. Add the steak to the greens and toss gently.  Serve with teh dressing on the side.


Caramel Cannabis Sauce
Serves: 4
Prep time: 5 minutes
Cooking time: 8-10 minutes

Ingredients:
1/2 cup cannabutter
1/2 cup distilled water
1/2 tsp sea salt
3/4 cup heavy cream
1 cup brown sugar
1/2 cup granulated sugar
1/2 tbsp vanilla extract

Directions:
1. In a saucepan, heat the cannabutter, water, salt, heavy cream, bown sugar, and granulated sugar over medium heat
2. Cook for 8-10 minutes, stirring constantly
3. Add the vanilla extract, and heat for 1-2 more minutes
4. Remove the sauce from the heat and let it cool for about 5 minutes
5. Serve, or store it in a tightly sealed jar in the fridge for later use.


Canna Roasted Almond Cookies
Makes: 36 cookies
Prep time: 12-15 minutes
Cooking time: 20 minutes

Ingredients:
1 cup cannabutter, softened
1/4 cup sugar
1 tsp pure vanilla extract
2 cups all-purpose flour
1/2 cup roasted almonds, finely chopped
1/4 tsp salt
2 tbsp cornstarch
1 cup powdered sugar (for coating purpose)

Directions:
1. In a large bowl, mix the cannabutter with the sugar until it is creamy
2. Add the vanilla extract, flour, roasted almonds, salt, and cornstarch
3. Thoroughly mix the ingredients together
4. Cover the bowl with foil, and refrigerate for 60-90 minutes
5. Preheat the oven to 325F
6. form the dough into 1-inch balls and arrange them on a baking sheet
7. Bake for 20-25 minutes
8. Put the powdered sugar in a bowl
9. Coat the cookie balls with the powdered sugar
10. Cool on a rack lined with parchment paper
11. Serve warm


Canna French Toast
Serves: 6
Prep time: 5 minutes
Cooking time: 5-10 minutes

Ingredients:
1 1/2 cups heavy cream
4 eggs
1 tsp cinnamon
Pinch of salt
3 tsp sugar
1/2 tsp nutmeg
8 tsp cannabutter, divided
12 slices whole-wheat bread
3 tbsp butter, melted (for serving)
Maple syrup for serving

Directions:
1. In a medium-sized bowl, thoroughly mix the heavy cream, eggs, cinnamon, salt, sugar, and netmeg.  Set aside
2. Melt half the cannabutter in a large skillet over medium heat
3. Immerse teh bread slices in the egg mixture
4. Arrange the soaked bread in the skillet and cook on both sides until lightly golden.  Repeat until all the bread is cooked, adding more cannabutter to the pan as needed
5. Enjoy the toast with melted butter and maple syrup, if desired


Marijuana Marshmallow Treats
Serves: 12
Prep time: 10 minutes
Cooking time: 5 minutes

Ingredients"
1/3 cup cannabutter
6 cups rice cereal
1 (12 ounce) package butterscotch chips
10 ounces mini marshmallows

Directions:
1. Butter or spray a 9x13 baking pan, and set it aside
2. Melt the cannabutter in a large saucepan over low heat
3. Add the marshmallows and heat to completely melt them, stirring constantly
4. Remove the pot from the heat and add the cereal; mix gently
5. Mix in the butterscotch chips
6. Spread the cereal mixture in the pan
7. Let it cool down for a few minutes, and cut into 2-inch squares.
8. Serve warm


Cannabutter Choco Pecan Pie
Serves: 8
Prep time: 10 minutes
Cooking time: 60-65 minutes

Ingredients:
3 tbsp cannabutter
3 eggs, beaten
1 tsp vanilla extract
3/4  cup corn syrup
3/4 cup brown sugar
3 tbsp bourbon liquor
2 tbsp flour
1/2 cup milk chocolate chips
1 1/2 cups pecans
1 (9 inch) pie shell, unbaked

Directions:
1. Preheat oven to 350F
2. Melt the cannabutter in a medium-sized saucepan
3. In a mixing bowl, beat the eggs, and add the vanilla, corn syrup, brown sugar, and bourbon until they are completely combined
4. Add the cannabutter and mix well
5. In another small bowl, toss the flour with the chocolate chips and pecans to coat.  Fold them into the filling.
6. Pour the prepared mixture into the pie shell
7. Bake for 60-70 minutes
8. Cool until set, and serve.


Canna Choco Bites
Serves: 12-14
Prep time: 10 minutes
Cooking time: 1-2 minutes

Ingredients:
2 1/2 cups milkk chocolate chips
1/2 cup cannabutter
4 cups large marshmallows, chopped
1 cup roasted peanuts, unsalted
1/2 cup toasted coconut
4 ounces glazed cherries

Directions:
1. Butter or spray an 8x8 baking pan
2. Put the chocolate chips in a large, microwave-safe bowl, and microwave for 30-second intervals, stirring each time until the chocolate is melted
3. Add the cannabutter, and combine until the butter melts.  Microwave for 15-20 seconds more if necessary
4. Let the mixture cool slightly, but not set
5. Add the marshmallows, peanuts, coconut, and glazed cherries.  Mix thoroughly
6. Spread the mixture in the baking pan and place it in the fridge to chill until firm
7. Cut into squares and serve!


Canna Chocolate Cake
Serves: 12
Prep time: 15 minutes
Cooking time: 1 hour 25-30 minutes

Ingredients:
1 cup cannabutter
1/2 cup shortening
3 cups cane sugar
5 eggs
1 tsp vanilla extract
3 cups flour
5 tbsp cocoa powder
1/2 tsp salt
1/2 tsp baking powder
1 cup milk

Directions:
1. Preheat oven to 325F and grease a 10-inch cake pan
2. In a large mixing bowl, thoroughly mix the cannabutter, shortening, and cane sugar
3. Add the eggs, and beat to combine
4. Add the vanilla and mix again
5. In a separate, medium-sized bowl, mix the flour, cocoa powder, salt, and baking powder
6. In intervals, add the dry ingredients to the wet, alternating with milk.  Mix well each time
7. Pour the mixture in the cake pan, and bake for 75-80 minutes


Cannabis Honey Oats
Serves: 6-7
Prep time 8-10 minutes
Cooking time: 5 minutes

Ingredients:
1 1/2 cup cannabutter
2 tbsp cocoa powder
1/2 cup peanut butter
3 tbsp honey
8 cups rolled oats

Directions:
1. Spray a baking sheet with cooking spray, and set it aside.
2. Melt the butter in a saucepan over medium heat
3. Add the remaining ingredients one by one
4. Mix well, and heat the mixture for 2-3 minutes
5. Spread the mixture in the baking pan, and chill for 18-20 minutes
6. Form the oats into medium-sized balls, and chill for another half an hour
7. Serve cold!


Canna Banana Chips
Serves: 6-7
Prep time: 10 minutes
Cooking time: 1 minute

Ingredients:
4 ounces banana chips
6 cups cereal such as Corn Flakes
1/3 cup peanut butter
6 ounces semi-sweet chocolate chips
14 cup cannabutter
1/2 tsp vanilla extract
1 cup powdered sugar

Directions:
1. Combine the banana chips and cereal in a large bowl.  Mix, and set aside
2. In a microwave-safe bowl, melt the peanut butter and chocolate in the microwave for 20-30 second intervals
3. Add the cannabutter and vanilla; combine well
4. Add the mixture to the cereal bowl, and mix thoroughly
5. Scoop the prepared mixture into a large resealable bag
6. Add the sugar and mix well by shaking the bag
7. Serve!


Cannabis Broccoli Casserole
Serves: 6-7
Prep time: 10-15 minutes
Cooking time: 1 hour 5 minutes

Ingredients:
1/2 cup cannabutter
2 heads broccoli, cut into small florets
3 cups rice, cooked
2 cups shredded cheddar cheese
1 cup chopped yellow onion
1 cup sliced baby portabella mushrooms
1 cup chopped celery
3 cloves garlic, chopped
1/4 cup slivered almonds
1 (10 1/2 ounce) can mushroom soup
1/2 cup bread, cut in small cubes

Directions:
1. Preheat the oven to 350F, and oil or spray a 9x13 baking pan
2. Melt the cannabutter in a small skillet, and set it aside
3. In a large mixing bowl, combine the broccoli, rice, cheese, onion, mushrooms, celery, almonds, and mushroom soup
4. Pour the broccolli mixture into the baking pan
5. Toss the bread cubes in the cannabutter, and then spread them over the broccoli mixture
6. Bake for 50-60 minutes
7. Serve warm!


Canna Banana Dessert
Serves: 4 
Prep time: 15 minutes
Cooking time: 5 minutes

Ingredients:
1/2 cup cannabutter
1 cup sugar
4 bananas, peeled and halved
1/2 cup coconut ice cream

Directions:
1. In a large, heavy skillet, melt the cannabutter
2. Add the sugar and heat, stirring constantly, until the sugar is melted completely
3. Add the bananas to the pan and cook for 2-3 minutes
4. Transfer the mixture to serving bowls, and top with the coconut ice cream

Non-Infusion Recipes


Delicious Cannabis Cake
Serves: 7-8
Prep time: 10-15 minutes
Cooking time: 25 minutes

Ingredients:
8 grams cannabis buds
1 cup butter
3/4 cup milk
1 cup sugar, granulated
1 3/4 cups all-purpose flour
2 eggs
1/2 tsp salt
1 3/4 tsp baking powder

Directions:
1. In a grinder or food processor, thoroughly process the cannabis buds
2. Preheat the oven to 375F
3. Melt the butter in a microwave-safe bowl, and mix in the cannabis
4. Mix in the milk, sugar, flour, eggs, salt, and baking powder
5. Combine the ingredients to form a smooth batter
6. Prepare a baking pan by greasing it with non-stick spray
7. Pour the batter into the pan and spread it out evenly
8. Bake for about 25-30 minutes, until the cake turns light golden brown, and a toothpick inserted in the center comes out clean
9. Take it out, and let it cool for 10 minutes.  Turn the cake upside-down on a wire rack for 10-15 minutes.
10. Serve warm!


Banana Cannabis Muffins
Makes: 18-20 muffins
Prep time: 15 minutes
Cooking time: 20 minutes

Ingredients:
1/2 cup vegetable oil
6 grams cannabis, ground
1 1/2 cups plus 2 tbsp all-purpose flour, divided
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg, beaten
3 bananas, mashed
3/4 cup white sugar
1/3 cup brown sugar
1/2 tsp cinnamon, ground
1 tbsp butter, unsalted

Directions:
1. Warm the oil in a saucepan, and add the cannabis
2. Heat for about 15-20 minutes over medium heat.  Set it aside
3. Strain the mixture through a piece of cheesecloth or metal strainer; squezzing gently to extract the oil
4. Preheat the oven to 375F, and line the muffin cups with muffin papers
5. In a large mixing bowl, combine 1 1/2 cups of flour, baking powder, baking soda, and salt
6. In a separate bow, combine the egg, bananas, white sugar, and the extracted oil.  Mix well
7. Add the banana mixture to the flour mixture, and mix until the batter moistens
8. Filled the lined muffin cups about two-thirds full with the batter
9. In a small mixing bowl, combine the brown sugar, cinnamon, and the remaining 2 tbsp of all-purpose flour.  Add the butter and mix again until crumbly
10. Top the muffins with this mixture
11. Bake for about 18-20 minutes.  Serve warm.


Canna Fruit Milkshake
Serves: 1
Prep time: 5 minutes
Cooking time: 1 hour 10 minutes

Ingredients:
1/8 cup chopped cannabis
1 cup of milk
10-12 strawberries

Directions:
1. In a food processor or grinder; mix the cannabis until it is finely ground
2. Pour the milk into the saucepan, and heat for about 5 minutes until it just begins to boil
3. Add the cannabis powder and mix well
4. Heat on low for 60-70 more minutes, stirring every 10 minutes
5. Remove the pot from the heat and let it cool down completely
6. Add the strawberries to the food processor and thoroughly mix them.
7. Strain the milk mixture through a piece of cheesecloth over a colander
8. Add the strawberries and mix well
9. Place in a refrigerator to chill for 15-20 mintues or more as required
10. Serve chilled


Beef Jalapeno Tacos
Makes: 12 tacos
Prep time: 15 minutes
Cooking time: 10-15 minutes

Ingredients:
3 ounces jalapenos, chopped OR green chilies, diced
1 pound ground beef
2 grams cannabis bud, ground
1 packet taco seasoning mixture
1/2 cup water
12 crispy taco shells
2 tomatoes, chopped
1 bunch romaine lettuce, chopped
1 diced onion (optional)
1 package prepared guacamole (optional)
4 ounces cheddar cheese, shredded

Directions:
1. In a skillet, combine the jalapenos, beef, and the ground bud
2. Heat over medium, stirring often, until the beef is browned.  Drain the fat
3. Add the taco seasoning mix and water.  Mix throughly and heat for 8-10 minutes on low
4. Place the taco shells on serving plates.  Add a little meat, tomatoes, romaine, onion, guacamole, and cheese
5 Serve immediately


Canna Beef Burger
Serves 2-3
Prep time: minutes
Cooking time: minutes

Ingredients:
1 pound ground beef
3 grams cannabis, ground
1 1/2 tsp Worcestershire sauce (optional)
1 egg
1 tsp extra virgin olive oil
1 tsp ground mustard powder (optional)
Salt and pepper to taste
Burger buns of your choice

Directions:
1. Preheat a grill to medium-high heat
2. In a large mixing bowl, combine the beef, cannabis, Worcestershire sauce, egg, olive oil, mustard powder, salt, and pepper
3. Thoroughly mix the ingredients
4. Using your hands, form burger patties from the mixture
5. Grill the patties on both sides for about 4-5 mintues, until they are cooked through
6. Place the patties in burger buns and top with your choice of veggies, like a mix of sprouts, onions, tomatoes, and lettuce.

Desserts



Dutch-Pizzelle Waffles

Serves:10-12

Prep time: 10 minutes

Cooking time: 15 minutes

Ingredients:

1 tsp ground cinnamon
6 tbsp dark corn syrup
1 cup cannabutter
1 1/2 cups brown sugar
1 package Pizelle cookies

Instructions:

For the filling

Take a medium sized saucepan.  Combine all the ingredients (except the cookies) in said saucepan.  Bring to a boil over low heat (234-240F) until it forms a soft ball.  Take the filling when warm and spread onto cookies.  Can be eaten along, with cookies, or as cookie filling between two or more!



Canna-Bananas Foster

Serves: 1-2

Prep time: 10 minutes

Cooking time: 5 minutes

Ingredients:

1/2 cup cannabutter
1 cup superfine sugar
4 bananas, peeled and halved length-wise
1/2 cup coconut ice cream

Directions:

In a large, heavy skillet over medium heat, melt cannabutter.  Stir in sugar and cook, stirring, until sugar is melted and light brown.

Place the bananas in the pan and cook until heated through, 2 minutes.  Serve hot with the coconut ice cream.



Danish Puffs

Serves: 10-12

Prep time: 15 minutes

Cooking time: 30-35 minutes

Ingredients:

1/8 tsp salt
1/2 cup cannabutter
1 cup  all-purpose flour
1 cup water
4 eggs

Instructions:

Preheat oven to 350F.  Take a heavy duty saucepan (2 quarts) and combine the cannabutter, salt, and water.

Heat the saucepan over medium heat to the point of boiling.

At the first sign of a full boil, begin to add the flour.  Stiring continuously for about sixty second, until a ball forms.

Take the saucepan off the heat and allow to cool.

Add each of the eggs in, mixing after each one is added.  The resulting mix should be extremely smooth.

Take the dough in tablespoons and place onto an ungreased baking sheet, making sure to leave at least 3 inches between each portion.

Place in the oven and cook until light golded and puffed, approximately half an hour.  When finished, poke each puff with a fork, this will help it cool faster.

Once completely cooled down, remove the tops and any soft dough remnants.  Add the filling of your choice, top it off with some warm chocolate chips, powdered sugar, or cocoa and enjoy!

Fillings that will make your mouth water:

There's a lot of flexibility here, the best fillings tend to be frozen (frozen yoghurt, sorbet, ice cream).  Don't forget to top!



Double Chocolate Pudding

This is how chocolate pudding should taste, deliciously intense, the perfect combination of smooth and yet thick.  Use only cocoa and chocolate of the highest quality to ensure best results.

Serves: 6

Prep time: 5 minutes

Cooking time: 15 minutes plus cooling

Ingredients:

1 tsp vanilla extract
2 tbsp cannabutter, cut into pieces 
2 tbsp cornstarch
3 tbsp unsweetened cocoa powder
1/2 cup white sugar
5 ounces of semisweet baker's chocolate, finely chopped
2 1/4 cups of whole milk
3 large egg yolks
Pinch of salt
Whipped cream for special finishing touch

Instructions:

Take a medium sauce pan and place over medium heat.  Add the salt with half of the sugar and milk, continually stirring over the heat, and bring to the point of boiling.  Once boiled, take the saucepan away from the stove at once.  

Take a bowl (separate from the sauce pan) and combine the cornstarch, egg yolks, remaining milk, and additional pinch of salt.  Whisk throughly and begin to add the saucepan contents to the bowl.

Take that reliable and favored saucepan and pour the contents of the bowl into it again.  Bring to the point of boiling over medium (high should also be fine here, just don't let it burn) heat.

Take the heat back down to a low lebel, just enough to keep the contents of the pot simmering, and whisk for 2-3 minutes.  The goal here is to thicken the pudding to desired consistency.  Once this is done we can go back to a bowl.

Depending on the type of bowl used before, you may want to grab a different one, as you need to ensure that the contents of the pot only go into a heatproof bowl  Once you've done that, it's time to add the cannabutter, vanilla, and chocolate into the melted mixture of delight. 

The resulting pudding should be incredibly, delectably smooth, delicious, and almost done.  Set it up for storage (It can be stored collectively, but prefer to separate it - makes about six servings), and chill it overnight to set the pudding. 

That's it, it's ready for your final touch of choice!  Mine, of course, is whipped cream.



Creme Brulee French Toast

This is a classic that can be served for breakfast, brunch or dessert.  It has a rich, custardy and creamy center and the caramel that forms on the bottom is wonderfully delicious.  You let it sit overnight so you just have to bake it when you are ready for it. 

Serves: 6

Prep time: 20 minutes

Cooking time: 35-40 minutes plus overnight chilling in the fridge.

Ingredients:

1/2 cup cannabutter
1 cup packed brown sugar
2 tbsp corn syrup or maple syrup
4 eggs
1 un-sliced loaf of white day old bread of choice (French, brioche, challah)
1 1/2 cups of half and half
1/4 tsp salt
1 tsp vanilla
1 tsp of Grand Marnier or orange liqueur
1 tsp cinnamon
Mixed berries, whipped cream or maple syrup for serving

Directions:

Melt cannabutter in a small saucepan over medium heat.  Add sugar and maple syrup and stir until the sugar is melted and smooth.

Pour into a 9x13 inch baking pan and spread around to cover the surface.

Slice the bread into equal generous size slices (around 1 1/2 inch thick) and remove the crusts.

Place into the baking pan in a single layer.

In a large bowl whisk together eggs, half and half, vanilla extract, salt, cinnamon and orange liqueur.

Spoon mixture evenly over the bread and cover and refrigerate overnights.

When you are ready to bake this; take out of the refrigerator and bring to room temperature (around 20-30 minutes) and preheat oven to 350 degrees.

Bake uncovered for 35 to 40 minutes until lightly browed and puffed.

Serve immediately with each slice turned over with the caramel on top.

Serve with mixed berries, extra maple syrup, or lightly whipped cream.

Notes: You can substitute the orange liqueur for 1/4 tsp of orange zest or 1/2 tsp of orange extract as it is the orange flavor that makes this recipe.

Cookies


Canna-chip cookies

Serves: 10-12

Prep time: 20 minutes

Cooking time: 10 minutes

Ingredients:

1/4 tsp salt
1/2 tsp baking soda
1 tsp hot water
1 tsp vanilla extract
1/2 cup of softened cannabutter
1/2 cup of white sugar
1/2 cup of brown sugar
 1 cup semisweet chocolate chips
1 1/2 cups all-purpose flour
1 egg

Instructions:

Preheat oven to 350F

Combine the brown sugar, white sugar, and butter, and mix until smooth.  Add the vanilla and the egg, combining thoroughly.

Take the hot water and stir the baking soda into it until dissolved.

Mix the baking soda/hot water and the salt into the bowl with the sugar and the butter.  Now it's time to add the flour and the chocolate chips.

The resulting mix can be spooned, by the tbsp, onto ungreased cookie sheets.  It should be cooked until the edges are golden, approximately 10 minutes.



Cannabutter Cookies

Serves: 10-12

Prep time: 15 minutes

Cooking time: 10 minutes

Ingredients:

1/4 tsp baking powder
1/4 tsp vanilla extract
1/4 cup cannabutter
1/3 cup firmly packed brown sugar
2/3 cup all-purpose flour
1 egg

Instructions:

Grease the cookie sheets that will be used and set the oven at about 350F in preparation.

Thoroughly mix the eggs, vanilla, sugar, and cannabutter together.

Sift together the baking powder and flour, and stir them into the mix.

Separate the dough into two inch square pieces (a knife can be helpful here).

Take the piece and coat in white sugar.

Roll the dough until rounded in heand.  Next, coat in brown sugar.

The resulting pieces can be place onto the prepared greased cookie sheets.  Be sure to leave at least 2 inches between pieces and bake until golden (approximately 10 minutes).



Orange Poppy Seed Cookies

These light and luscious cookies are citrusy and nutty and ideal when you don't feel like something too overly sweet and heavy.  They are simple and quick to put together and pack a lot of flavor.

Serves: 36

Prep time: 15 minutes

Cooking time: 10-12 minutes

Ingredients:

1/2 tsp baking soda
1 tbsp orange zest
1 tsp orange juice
1 tbsp poppy seeds
1/2 cup cannabutter
2/3 cup sugar
1 1/4 cup flour
1 egg
Dash of salt

Instructions:

Preheat oven to 350F.

Whisk the sugar and cannabutter together for about 2 minutes.  This will leave a light batter, relatively fluffy.

Add the orange zest, the orange juice, and the egg, making sure to thoroughly mix each one for best results.

Take another bowl and sift the baking soda, salt, and flour together.

Add the sifted mix to the original batter, and mix only long enough to see them combined before folding inn the poppy seeds.

Tip: for chewier cookies, like the cookie sheets before baking.  Parchment paper works best!

The mix is now ready to be placed onto the cookie sheets.  Take a teaspoon and parcel out the pieces, making sure to leave even spaces between each cookie.

Place in the oven and bake for about 10-12 minutes, the cookies are ultimately done when the edges are golden.  Remove from the heat, let them cool down, and enjoy!

Slice and Bake Cinnamon Cookies

A very simple, crisp cookie with a great cinnamon taste that just bursts with flavor.
Just slice and bake when needed in very little time as you do with store bought cookie dough and they are ready in a flash.  These are 10 times as delicious though and you will always have cookies at a moment's notice!

Serves: 60 cookies

Prep time: 20 minutes plus 1 hour chilling time

Cooking time: 8 minutes

Ingredients:

1 cup cannabutter
1/2 cup firmly packed light or dark brown sugar
1 tsp vanilla
2 1/4 cups all-purpose flour
1/2 cup sugar
1 tsp ground cinnamon

Directions:

Combine cannabutter, brown sugar and vanilla in a large bowl.  Beat with a whisk or electric beater on medium until light and creamy.

Add flour and beat, scraping bowl often, until mixture forms a dough.

Divide dough in half.  On waxed paper, shape each half into a 10 inch roll, lifting the wax paper to help shape the roll.

Wrap each roll in plastic wrap and chill for 1 hour until dough is firm enough to slice. 

When you are ready to bake them preheat oven to 375F.

Cut logs (or as many cookies you want to bake) into 1/4-inch slices with sharp knife.

Place 1 inch apart onto ungreased cookie sheets.  Bake for 9 to 10 minutes or until lightly browned on edges.  Cool slightly.

While cookies are cooling, combine sugar and cinnamon in small bowl and roll the warm cookies in cinnamon-sugar mixture. 

The cookie dough will stay fresh for up to a week in the refrigerator or you can freeze it for up to 3 months.  Just keep well wrapped in the plastic food wrap.



Tropical Paradise Cookies

Moist, buttery cookies, that are so soft they almost have a cake like feel to them with a great pineapple flavor.  Add in the macadamia nuts and coconut and they have a wonderful fruity tropical flavor.

Serves: 36 cookies

Prep time: 15 minutes

Cooking time: 15 minutes

Ingredients:

1 tsp baking powder
1 tsp vanilla
1/4 cup finely chopped crystallized ginger (optional)
1/2 cup softened cannabutter
1 (8 oz) can crushed pineapple in juice, well-drained
23 cup of chopped macadamia nuts
3/4 cup sugar
34 cup sweetened flaked coconut
1 3/4 cup flour (all purpose works best)

Instructions:

Preheat oven to 350F.

Combine sugar and cannabutter in large bowl.  Beat with a whisk or at medium speed with an electric beater until light and fluffy.  Add pineapple and vanilla; mixing continuously to the point of being well combined.

Add flour and baking powder and beat until well mixed.

Gently stir in nuts, 1/4 cup coconut and crystalized ginger (if using).

Place remaining coconut in a small bowl. 

Shape dough into 1-inch balls and dip top of each cookie into remaining coconut.  Take the cookies and place them onto the ungreased baking sheets, ensuring that there are two inches between each cookie.  Bake for 12 to 15 minutes or until set. 

Let cool for 5 mintues before removing from cookie sheets.



Nutty Snowballs
These simple little taasty cookies are just so easy to make.  The have a wonderful shortbread like texture that just melts in your mouth.

Serves: 36
Prep time: 10 minutes
Cooking time: 20 minutes

Ingredients:
1 cup cannabutter, softened
1/4 cup sugar
1 tsp pure vanilla extract
2 cups all-purpose flour
2 tbsp cornstarch
1 cup of unsalted roasted almonds, finely chopped.
1/4 tsp salt
1 cup of powdered sugar to coat.

Directions:
In a large bowl, use a whisk or handheld electric mixer on low speed, beat the cannabutter with 1/4 cup of the sugar until creamy.

Add the vanilla extract.  Gently beat in the flour, corn starch, roasted almonds and salt until well combined.

Wrap in plastic wrap and refrigerate for one hour.

Preheat oven to 325F.

Remove the dough from the refrigerator, and roll about a tbsp of dough into a 1 inch ball.

Arrange the balls on the baking sheet about 1 inch apart.  Bake the cookies on the middle shelf of the oven for 20 mintues, or until golden and set.

Fill a shallow bowl with 1 cup of sifted powdered sugar.

Cool for around 5 minutes and when cool enough to touch, roll the cookies in the powdered sugar and set aside on the parchment lined rack to cool completely. 

When cool, dust again in the powdered sugar and store in an airtight container.

Note: You can also use pecans, walnuts, hazelnuts, macadamia, almonds, or any of your favorite nuts or a combination as they all work well.

Strawberry Thumbprint Cookies

A very addictive shortbread cookie that is perfect for cannabutter.  They will disappear very quickly!  You can also use different jams as well as apricot or cherry are just as delicious.

Serves: 42 cookies

Prep time: 20 minutes plus 1 hour chilling time

Cooking time: 15 minutes

Ingredients:
1 cup cannabutter, softened
2/3 cup sugar
2 cups all-purpose flour
1/2 cup strawberry jam, at room temperature

Directions:

Combine cannabutter and sugar in a large bowl  Beat with a whisk or electric beater on medium until soft and creamy.

Add flour and beat or mix until well combined.

Cover, refrigerate for at least 1 hour until firm.

Prehat oven to 350 degrees F

Shape dough into 1 inch balls and place 2 inches apart on an ungreased cookie tray.

Make an indentation with your thumb in the middle of each cookie about half way through.  The edges may crack slightly but this is fine.

Stir the jam until it has a smooth consistency and then fill each indentation with 1/4 tsp of strawberry jam.

Bake for 14-18 minutes until edges are lightly browned on the middle rack of oven.

Let stand on cookie tray for 1 or 2 minutes and then remove to a cooling rack.

Notes: Don't make the indentation too deep otherwise it will soak through while baking.

Don't miss out on the chilling process as if the dough is too soft the cookies will spread.

I'd consider replacing butter with Coconut oil! mmmmmm...
